Chia pudding with cinnamon-fried apples

Learn how to make a creamy chia pudding with flavours reminiscent of cinnamon buns. Chia seeds are rich in omega-3 fatty acids, protein and fibre, which provide long-lasting satiety and stable blood sugar levels. The topping of fried apples, cinnamon and a little sweetness makes it both nourishing and comforting.

Ingredients for 1 serving

  •  2 tablespoons chia seeds
  • 2–3 dl coconut milk or milk of your choice
  • A pinch of cardamom
  • 1 apple
  • A knob of butter
  • 1 teaspoon maple syrup or honey
  • Plenty of cinnamon

Here's what to do

Mix the chia seeds, milk and cardamom. Leave in the fridge for at least 30 minutes, preferably overnight.
Cut the apple into small cubes. Fry in butter over medium heat until soft.
Sprinkle generously with cinnamon and drizzle with maple syrup or honey.
Serve the warm apple pieces on top of the pudding.

Top with your seed cycling seeds.
Add some yoghurt for extra creaminess.
Eat with a boiled or fried egg for a more filling breakfast.
