I've created a delicious and nutrient-packed snack that’s perfect for your inner autumn—stuffed dates with a creamy filling of sesame seeds, sunflower seeds, nut butter, and quinoa puffs, all covered in melted dark chocolate with a sprinkle of sea salt.
Recipe: Seed-Cycle Stuffed Dates for the Luteal Phase 🌸
Ingredients:

A pinch of sea salt

10 pitted dates

1-2 tbsp ground sesame seeds

1-2 tbsp ground sunflower seeds

About 2 tbsp nut butter, until creamy consistency

About 1 tbsp butter or coconut oil

About 2 tbsp quinoa puffs

50g dark chocolate
Prepare the filling:
- In a bowl, mix the ground sesame seeds, sunflower seeds, and quinoa puffs.
- Add the nut butter and your chosen fat, mixing until you reach a creamy consistency.
Fill the dates:
Cut a slit in each date and fill it with the prepared filling.
Melt the chocolate:
Melt the dark chocolate over a water bath.
Cover the dates:
- Dip or coat the filled dates in the melted chocolate and place them on a baking sheet.
- Sprinkle a pinch of sea salt over each date before the chocolate hardens.
Let them set:
Place the chocolate-coated dates in the fridge for about 15 minutes until the chocolate has set.
